The Gaia restaurant, conveniently located a stone's throw away from The Old Bell, captivated me with its cozy ambiance and impeccable service.As a German with a penchant for refined dining experiences, I was drawn to the Brasserie's stunning setting. The curved, stained glass ceiling and warm wood paneling created an inviting atmosphere that perfectly complemented the innovative dishes on the menu.Opting for a table at the simple terrace overlooking Rembrandt Square, I savored each bite of the delectable cuisine, which was a harmonious blend of traditional Dutch flavors with a modern twist. The attentive staff at the restaurant ensured that my dining experience was nothing short of exceptional.In a heavily touristed area bustling with bars and cafes, NH Amsterdam Schiller stands out for its culinary excellence and sophisticated ambiance.
